Genetically modified food has emerged as an effective alternative to pest control which, consequently, as led to an increase in food production. The genetically modified maize is obtained by the genetic alteration through the insertion of delta-endotoxin genes of Bacillus thuringiensis (Bt). These genes have the characteristic of expressing insecticidal proteins with specific properties, such as Cry proteins. The GMOsensor project anticipates the establishment of an effective international network focused on the development of innovative analytical devices, mainly DNA and protein-based, for the detection of genetically modified organisms (GMOs) in food and feed. In this study, a new approach for the monitoring of GMOs has been developed. The aim of this work was the identification and selection of immunogenic peptides as biomarkers for genetically modified maize. Initially, this approach consists in the prediction, by available bioinformatics tools of potential immunogenic peptides to inoculate in animals and generate proper antibodies used in the development of a biosensor.
