Resumen:
Currently and according to the growing worldwide interest in the revaluation of agricultural by-products, the use oflegumes waste presents great potential to obtain bioactive compounds. In this context, high-intensity ultrasound-assistedextraction of phenolic compounds represents a very promising tool. On the other hand, despite the great benefits thatthese compounds provide to health, their industrialization represents a challenge since they are susceptible to the externalenvironment, processing, and gastrointestinal conditions. In this context, their encapsulation in Ca(II)-alginate hydrogelsrepresents a great possibility in their incorporation and consumption in different food systems.
