Starches are usually modified to help prevent undesirable changes in product texture and appearance in food applications1. In the current study, a heterogeneous solvent-free route was used for the production of acetylated starch and acetylated crosslinked starch. With this purpose, a naturally occurring dicarboxylic α-hydroxy acid (L-tartaric acid) was added to the starch acetylation medium. The capacity of tartaric acid to crosslink starch simultaneously with acetylation was analysed by evaluating the functional properties of acetylated starch (AS) and starch acetylated in presence of tartaric acid (AS-T). Reaction conditions were modulated to obtain modified starches with a comparable degree of substitutions (DS), and within the range permitted for food industry use (< 2.5 % of acetyl groups).
