Resumen:
The objective of this research was to evaluatethe effect of high intensity ultrasound (HIU) andcrystallization temperature (Tc) on the crystallizationbehavior, melting profile, and elasticity of a softstearin fraction of high stearic high oleic sunfloweroil. Results showed that HIU can be used to induceand increase the rate of crystallization of the softstearin with significantly higher SFC values obtainedin the sonicated samples, especially at higher Tc. SFCvalues were fitted using the Avrami model andhigher kn and lower n values were obtained whensamples were crystallized with sonication suggestingthat sonicated samples crystallized faster andthrough an instantaneous nucleation mechanism. Inaddition, crystal morphology, melting behavior, andviscoelasticity was significantly affected bysonication.
