Resumen:
Lipases are ubiquitous in nature and are producedby plants, animals and microorganisms. Lipases ofmicrobial origin (fungal and bacterial) are the mostcommonly used enzymes in biotechnologicalapplications and in organic chemistry. Recently, much research has been devoted to thecharacterization and use of plant lipases obtainedfrom latex, with a view to provide an alternative tothe microbial lipases produced using geneticengineering methods. In the current contribution, thehydrolytic and synthetic activity of lipase from theinsoluble fraction of latex obtained from fruits ofAraujia sericifera (ASL) Brot. (Apocynaceae), arecharacterized by use of target substrates. ASLactivity was compared with Novozym 435, acommercial immobilized lipase used as standard.
