In despite of decay processes subsequent to deposition, some archaeological activities like food preparation sometimes remain until today in the way of organic and inorganic residuals in tools.  Since their water insolubility, lipids are the more diagnostic organic compounds commonly identified by Gas Chromatography-Mass Spectrometry. In this case, GC-MS was used to analize a milling-stone tool from Cueva de Los Corrales site (Tucumán, Argentina) with the goals of identify organic compounds and verify the usefulness and reliability of GC-MS in archaeological artifacts. A sample was removed brushing active surface of tool, then was made a solid-liquid extraction with three times destilled Chloroform, that was analized in a Hewlett Packard HP 6890 Series GC System-Hewlett Packard 5973 Mass Selective Detector. Various lipids that refer to corn and burn bone was identified in the sample coincidently whit data obtained by other complementary techniques, showing the usefulness and reliability of GC-MS for identification of archaeological chemical residuals, mainly when is used  whit additional data.
