Resumen:
The milling of starchy plants such as tubers, legumes, cereals and pseudocereals, is broadly recorded historically and ethnographically in northwestern Argentina. Even though it is assumed that this practice was intensively carried out in prehispanic times, it was never directly documented in archaeological contexts in this region. Related to this, the study of archaeological milling-stone tolos from different agricultural and pastoral contexts of the Puna and valley areas in northwestern Argentina, i presented. The samples analysed were obtained from used surfaces of tools, then they were observed at petrographic microscope with normal and polarized light and, occasionally they were tested whit I-IK solution to detect the starch grains. These starch grains were identified by comparing them with modern samples and reference bibliography, based on their diagnotic characters. In addition, the previous peeling at seeds, revealed by the scarcity of typical phytoliths of glumes, and the strong milling manifested by broken starch grains was verified. The presence and characteristics of starch evidenced the milling of cereals and pseudocereals seeds in prehispanic northwestern Argentina.
