Resumen:
Folic acid (FA) is a vital human vitamin which is introduced through food. We are researching thefeasibility of incorporate it in matrices in terms of its sensitivity to the respective factors for itsprocessing. Chitosan (Q) is an aminopolysaccharide biopolymer composed of β-D-glucosamine and N-acetyl-D-Glucosamine units distributed at random. It is acquired to a greater or lesser degree ofacetylation by the deacetylation of chitin, which characterizes its conduct in accordance with molecularweight. As it is non-toxic, biodegradable, and biocompatible it is commonly used as a carrier matrix forbioactive compounds on the nano-scale. The high expense of pure polymer makes its use unfeasibleindustry scale. In this context, it is interesting to work with high molecular weight Q produced inArgentina (QA).
