Resumen:
Objectives:1.To find molecular markers (genetic) to verify the authenticity of chia, flax and sesame seeds and, its presence in complex foods (bakery products containing chia seeds or defatted chia).2.To evaluate the metabolomic profileof chia, flax and sesame seeds, looking for chemical markers that allow confirming the presence of such seed in food products.3.To verify the stabilityof chia, flax and sesame considering important nutritional components along the production chain(production of bakery products containing these seeds, single seed or mixtures).4.To suggest and validate a tool-kit, constructed from diverse markers (genetic-molecular, chemical, metabolomics, etc.) to verify the presence and relative amount of chia, flax and sesame for regulatory purposes.
