Resumen:
The use of chemical fingerprints, namely: trace elements, isotopic patterns and secondary metabolites is proposed as a way to verify both food provenance and risks associated with food consumption. The presentation will address the use of chemical fingerprints to assess food origin, either geographical or species, using Argentinean foods (wheat, meat and wine) produced in different areas of the country as examples. Additionally, the use of trace elements and isotopic fingerprints is currently being developed to evaluate the association between water pollution and edible fish. Results on this last topic include evaluation of pollutants reaching water bodies from surrounding cities, industries, etc., which origin could be assessed using modern analytical tools: trace elements and isotopic analysis. A discussion on the probable use of chemical fingerprints to determine food safety, in relation to food production at either clean or polluted areas will be presented.
