Resumen:
  Poliphenol content depends on the variety, management of vineyard, temperature, water status and hormones. The light is fundamental for biosynthesis of anthocyanins. Defoliation improved the illumination in cluster. The objective was to evaluate the effect of defoliation in the East (E) and West (W) at different moments. In a lapse of 30 days before harvest (H) the smaller concentrations of ANT were in W cluster in 2007 and 2008. East cluster presented similar content than C. When defoliation was made in veraison, both treatment (W and E) diminished ANT and PT vs C. Defoliation was realized 30 days after veraison (2009) and the concentration of ANT in berries was smaller in W and E vs C. The high temperature in March decreases the ANT content in East-cluster. At Mendoza (high-light), defoliation decreased anthocyanins in berries and that varies according to the moment executed and the face of the vineyard.
