Reliable quantitative tools have been proposed to evaluate and compare the sustainability of processes during the last decades. Metrics in green chemistry allows the possibility to compare different methods and critically select the greenest option. The aim of this chapter is to present an overview of knowledge regarding principal metrics applied as well as their scope. Organic Synthesis, Industrial Processes, Analytical Chemistry and Foodomics were considered. Furthermore, recent trends and future perspectives concerning challenges on how green metrics can contribute to the sustainable progress are stated.
