Enzymatic esterification of glycerol can be used to produce saturated monoglycerides in mild reaction conditions. Commercial biocatalysts from Rhizomucor miehei lipases were used to synthesize monoglycerides by esterification reaction of glycerol and palmitic?stearic acids mixture (P+St) in solvent free systems. The influence of important factors such as glycerol: P+St molar ratio and amount of biocatalyst on monoglycerides formation and conversion were analyzed. The reaction medium containing the highest excess of glycerol favored the monoglyceride synthesis. The best results were obtained using a 8:1 molar ratio (G: P+St) and 5% by weight of lipases. Under these conditions, a conversion of 86% of the initial fatty acid and a selectivity of 69% for the formation of monoglycerides was reached.
