The use of natural protein extracts of purified proteins as antioxidant has attracted particular interest. In this study, antioxidant activities of glycosidase inhibitory proteins isolated from Solanum betacea fruits and Solanum tuberosum tubers were investigated. To evaluate the antioxidant activity we tested their effect on DPPH (stable free radical), hydroxyl and superoxide radicals. Both proteins exert inhibition of uric acid formation and inhibition on nitro blue tetrazolium reduction by O2. The experimental resultsindicate that the both proteins were effective as scavengers of hydroxyl and DPPH radicals compared to BHT (an synthetic antioxidant) and α-tocopherol. According with the results obtained we suggest that these proteins are promising as ingredients for developing functional foods with a beneficial impact on human health as well as the importanr source for the production of bioactive peptide. In order to evaluate the potential toxicity of these protein we carried out two bioassays. The analysis of results obtained by Allium cepa and Salmonella/microsome assays shows not genotoxicity and mutagenic effect  at concentrations that both protein have antioxidant activities (30-480 µg/plate).
