Resumen:
The Agro-food industry generates per year huge amount of by-products, which represent a rich reservoir of valuable, often bioactive metabolites. Thus, integrated management of them according to the concept ?reduce, reuse, and recycle? is required. That process promotes the sustainability of the Agro-food industry by the incorporation of the Bioeconomy concept, for the production of renewable biological resources and the conversion of these resources and waste streams into value-added products, such as food, feed, bio-based products, and bioenergy. In doing so, basidiomycetes and mainly, Pleurotus sp. offers many technical advantages (e. g. the fully sequenced genome of P. ostreatus) and has been used to produce enzymes and lower mass metabolites. Besides, a few studies were conducted to evaluate the capability of Pleurotus strains to use low-cost side-streams from the Agro-food Industry to produce a wide variety of enzymes or natural compounds via eco-friendly biocatalysis.
