Resumen:
Enzymes are proteins that act as highly efficient catalysts in biochemicalreactions. This catalytic capability is what makes enzymes unique andthey work efficiently, rapidly, and are biodegradable. The use of enzymesfrequently results in many benefits that cannot be obtained with traditionalchemical treatments. These often include higher product quality and lowermanufacturing cost, less waste, and reduced energy consumption. Industrialenzymes represent the heart of biotechnology processes and biotechnology(Whitehurst and van Oort 2009; Sabalza et al. 2014)
