Abstract The antimicrobial effectiveness of nisin and potassiumsorbate, incorporated individual and combined, infilms made with tapioca starch and its mixtures with hydroxypropylmethylcellulose were studied. The combination ofantimicrobials was more effective against Listeria innocuaand Zygosaccharomyces bailii than their individual incorporation,with the added advantage of providing greaterinhibitory spectrum. The effect of the formulation on somephysical properties was also evaluated. The blendedbiopolymers-based films showed an increase of stress (σr)and elastic modulus (E) but a decrease of the strain at break(εr). In turn, the water vapour permeability and solubility inwater were enhanced. In addition, these films were clearerthan those made only with starch. It must be remark that,despite the antimicrobial agents modified films physicalproperties, producing a lower σr and E, a higher εr, solubilityand darker films, they maintained a suitable behaviour as apackaging material.
