ABSTRACT Benzoic acid (BA) pungency was kinetically characterized. Psychophysical methodology was used by computerized record of pungency intensity across time. The main attribute of BA was pungency (3-36mM) on tongue. The seven kinetic parameters varied in a concentration-dependent manner (P<0.001), following different functions: a) linear: Imax =2.24±0.14 * C-3.06±2.58 (Maximum Intensity); R2=0.98; Timax =0.19±0.02 * C+6.87±0.47; R2= 0.92 (Time to achieve Imax,); V1 =0.68±0.03 * C+0.10±0.69 (Increase rate); R2=0.99; AUC=49.10±3.17 * C-230.78±59.66; R2= 0.98 (Area under curve); and b) power: T1/2=6.62±0.61* C0.39±0.03, R2=0.97 (Half Life); V2=1.07±0.11* C0.53±0.04, R2=0.96 (Decrease rate); Ttot=8.08±1.01* C0.43±0.04, R2=0.96 (Total Time). PCA showed high correlation among: a) Timax and Ttot; b) T1/2 and V2; c) Imax, and V1. Stimuli grouped into three clusters (mM): a). 3 and 6; b). 9, 12 and 18; c). 24 and 36. Prototypical BA prickling would be induced by 12-18 mM.
