Ochratoxin A (OTA) and ochratoxigenic fungi in grapes and wine in Argentina

Resumen:
This study showed the progress done on the evaluation of the ochratoxigenic mycoflora and OTA in grapes harvested in Argentina. The evolution of contamination whit Aspergillus section Nigri and ochratoxin A occurrence was evaluated in vineyards from the grape growing area in Argentina during 2003/2004 ad 2006/2007 harvest seasons. The main species isolated belonged to A. niger aggregate, A. carbonarius, the main OTA producer also was isolated. Around 30% of the isolated strains where OTA producers. The OTA presence is being evaluated in these grape samples. The vinification process was done using must from two varieties of red grapes (Tempranillo and Bonarda) cultivated under two different cropping practices (organic and conventional). The OTA levels during the vinification dropped in average about 85%. The reduction in OTA concentration could be explained due to the fermentation process. Adsorption of the toxin to the yeast lees could also occur.  The type of Saccharomyces strain added showed no effect in the toxin reduction.  This study will be helpful to develop an HACCP system in wine chain from the field to the wine.  Further studies are in progress in order to evaluate OTA levels in wine  obtained from different areas of grape cultivation. key words: ochratoxin A, grapes, wine, HACCP system
