Argentina is one of the main country peanuts producer and exporter. Peanuts are susceptible of contamination with Aspergillus section Flavi and aflatoxins at different stages of the food chain from the field until storage. Aflatoxins are of concern due to their acute and chronic toxicities both for human and animals.Through the peanut food chain Good Agricultural Practices (GAP), Good Manufacturing Practices (GMP), and Hazard Analysis and Critical Control Points (HACCP) have been established in order to ensure peanut quality and safety.The export of peanut is clearly regulated and under the control of SENASA and custom officials. from the field until storage.
