Resumen:
The objectives of this study were to study the content of β-carotene in two sweet potato cultivars with orange pulp, Beauregard and Colorado INTA; evaluate its variation during storage and determine the percentage retained after processing as creamed sweetpotato. The correlation between β-carotene and the color of the pulp was also analyzed. The β-carotene content was determined spectrophotometrically and the evaluation of color was performed by colorimetry according to the CIELab system. After harvest, β-carotene content in the Colorado INTA cultivar was 27% higher than in Beauregard. After 90 days storage, variation in both of them was slight but significant (p
