Ilex paraguariensis St. Hil. is one of most used species in South America due to its energizing, nutritional and medicinal properties. Phenolic compounds, related to the antioxidant activity are present in this plant. I. paraguariensis is industrialized and commercialized as “yerba mate”. The aim of this study was to evaluate if the industrial process can alter the antioxidant activity, specially DPPH free radical and the prevention of lipid peroxidation of I. paraguariensis. Aqueous extracts from fresh leaves just harvested and from the commercial product obtained after the forced aging process were analyzed.  The total polyphenols content was determined according to the Folin-Ciocalteu method and the main phenolic compounds were quantified by HPLC with DAD. In this work it was demostrated for the first time that the industrial processing decreases the antioxidant activity of I. paraguariensis extracts despite an increase in the polyphenols content was observed. These results suggest the presence of compounds with pro-oxidant activity which should be investigated.
