Comunicación:Introduction: Andean grains are foods of high nutritional value, contain phytochemicals suchas polyphenols with antioxidant power, exerting an effect against degenerativediseases. The objective was study the content of bioactive compounds (BAC) inquinoa, amaranth and tarwiMaterials and Methods: For BAC extraction, the whole grains were milled in a mill for 5 minutes, theproducts obtained were named: quinoa flour (QF), amaranth flour (AF) and tarwiflour (TF), the were stored in closed containers until its analisys. In HQ, HAand HT, polyphenols (PF) were determined by Folin Ciocalteu (Singleton Rossi,1978), in a calibration curve with gallic acid, the content was expressed as mgacid gallic equivalent (EAG). Antioxidant content was quantified with theRadical ABTS method (Re, et al. 1999), on a calibration curve with Trolox,results were expressed as um Trolox equivalent (ET). For the readings of thewater-soluble compounds, an extract with water was prepared, the fat-solubleextracts were extracted with the mixture of hexane-acetic acid-acetone. Results: The content of soluble PF was 60.59mg in HQ, 39.07 in HT and in HA 14.59mgEAG /100gr, the fat-soluble fraction was: 1024.05mg in HT, 513.70 in HQ and in HA124.20mgEAG / 100gr. The antioxidants in the water-soluble extract varied inthe range of: 297.65um in HQ, 274.57um in HT and in HA105, 76 um ET / 100gr;liposoluble antioxidants were 465.65um in HQ, 461.36um in HT and in HA 276.18umET / 100gr.Conclusion: Andean grains are an adequate source of BAC, the variability between samplescan be attributed to the chemical structure of the grains.Interest conflic declaration: Authors declare no interest conflicts
