Resumen:
The diet components of laying hens and broilers contain secondary products of plant metabolism, lectins among them, which act as a defence mechanism in vegetables. The presence of dietary lectins may impair the development of the intestinal epithelia and the activity of digestive enzymes in baby chicks with the consequent depression of their growth. Lactic acid bacteria may decrease the cytotoxic effects of lectins on intestine epithelial cells capturing them by interacting with bacterial surface carbohydrates. In the present work, the capacity of lactic acid bacteria and propionibacteria strains previously isolated from broiler intestinal content to capture dietary lectins, was evaluated using a fluorometric technique, employing 6 fluorescein labelled lectins. Ninety-four percent of the strains studied showed the ability to capture at least a dietary lectin.
