The development and characterization of a bacteriocin containing polyethylene based film was carried out. Lactocin 705, lactocin AL705 produced by Lactobacillus curvatus CRL705 and nisin were incorporated. Three different procedures to obtain lactocin 705 and AL705 solution were assayed, the partially purified aqueous bacteriocins solution showing the highest inhibitory activity against indicator strains (Lactobacillus plantarum CRL691 and Listeria innocua 7). To incorporate bacteriocins to PE-based films, pouch contact, soaking and contact method were compared. The results showed that contact between PE film and bacteriocin solution was more effective since a uniform distribution of the bacteriocins on the film surface was observed and less active solution volume was needed. Bacteriocins solution MIC was 267 AU cm-3 (lactocin 705) and 2133 AU cm-3 (lactocin AL705) while 1 hour was established as the minimal contact time. When relative inhibition area for antilisterial activity of the active films was compared, those treated with L. curvatus CRL705 bacteriocins displayed higher inhibitory activity than nisin treated films. Functional properties of active PE-films containing lactocin 705 and AL705 showed no modifications when compared with non active control films. Bacteriocin active PE-based film showed to be highly effective inhibiting the growth of Listeria; the potentiality to use commercially available packaging films as bacteriocins carriers may have an impact in active packaging systems.
