Enterococcus mundtii CRL1656 isolated from stripping milk, was previously selected as a potentially probiotic. This strain produces mundticin CRL1656, a bacteriocin active against Listeria innocua, L. monocytogenes and Streptococcus dysgalactiae. The effect of culture medium, initial pH, temperature of incubation, level of agitation and inoculums size, on biomass and bacteriocin production in E. mundtii CRL1656 was evaluated at the same time. A 3x24 complete factorial experiment design with replication was performed. Growth parameters were determined by applying the modified Gompertz model. A non-linear and a linear mixed model were applied to estimate the effects of the five variables on biomass and bacteriocin production respectively. Optimal biomass and bacteriocin production were obtained in different conditions (M17, pH 6.5, with 5.0% inoculum, at 30 ºC with agitation, and LAPTg, pH 6.5, 2.5% inoculum with or without agitation respectively).
