Gallic acid (GA) was successfully grafted onto fish gelatin (FG) through a one-step method in order to produce an antioxidant material. Grafting reaction was accomplished at room temperature using a water-soluble redox pair able to generate free radical species at room temperature. Fish gelatin-antioxidant physical mixtures were also obtained under similar conditions than those of grafting in order to confirm the occurrence of covalent bonds between FG and GA. Grafting was assessed by Fourier Transform Infrared Spectroscopy (FTIR) and UV-vis spectroscopy. Antioxidant incorporation was also corroborated by comparing X-ray diffractograms (XRD) of grafted and physically mixed GA-FG samples. The 2,2-diphenyl-1-picrylhydrazyl (DPPH) assay revealed that the antioxidant retained its antioxidant activity after grafting, confirming the efficiency of the proposed reaction pathway. The preliminary results showed that antioxidant moieties covalently bonded to fish gelatin allows producing gelatin with primary antioxidant activity with potential at the food packaging industry.
