Biological membranes are complex systems. In view of this complexity and in order to avoid collateral effects that may arise during lipid peroxidation process of whole retinal membranes, we have attempted to gain understanding of the mechanisms responsible for peroxidation in a simple model system, made by dispersing retinal lipids in the form of liposomes. This chapter describes a very useful method to prepare liposomes with natural phospholipids and the necessary methodology to follow the lipid peroxidation of these liposomes.
