Speckle patterns produced by active materials illuminated with laser light provide us useful information to analyze dynamic local characteristics of several kind of samples. This phenomenon is characteristic of biological samples (biospeckles) There is a naturally high complexity in the interaction of the laser beam with different biological samples, all containing a large amount of variables. Biological tissues, in the variability of their samples, offer an even wider range for study. However, dynamic speckle phenomenon is also present in several industrial processes. Tracking speckle features provides a means to monitor the time evolution of phenomena and systems under observation. Biospeckle study constitutes a multidisciplinary area that challenges scientists to connect with one another?s specialties. We show the origin and features of the dynamic speckle, numerical models and the algorithms for speckle image analysis as vortices, non extensive statistics, probability clasifications by supervised neural networks and self organized maps (SOM). We present several applications, for example, studies of seeds phases proportions, parasite motility, damage in fruits and seeds, chemotaxis movement of bacteria, drying of paint, hydro adsorption in gels and biomedical applications. We also discuss the advantages and shortcomings as well as future perspectives of the biospeckle technique as nondestructive testing for dynamic processes characterization.
