Resumen:
The fast growth population impose to the world a big challenges in many areas of human life and requires to take urgent measures in many areas. Food quality, safety and nutrition are a major concern since malnutrition impair physical, social and cognitive activities, with strong consequences in our societies. Efficient functionalized foods as fortified and special purposes foods with the development of new technologies will sustain population growth and alleviate malnutrition and famines. However, there are remaining technical challenges to be solved like the increase additives stability against oxygen, light and other detrimental factors; targeting specific location delivery in the digestive system by the development of smart encapsulation models; making long-lasting flavor and taste issues; enhance storage capabilities by developments of new and more complex packaging systems. Smart packaging and controlled release will play a major role based on biotechnology and nanotechnology tools for the development of foods with improved quality and storage time.
