The metabolism of sucrose and the formation of exopolysaccharide (EPS) by Gluconacetobacter diazotrophicus PAL3, in pH-controlled cultures, with sucrose concentrations of 20 and 100 g.l-1 were studied. Levans concentration in culture effluents increased by increasing the sucrose concentration in the medium with about 15% w/w of sucrose conversion in EPS. FOS were also produced either with 20 or 100 g.l-1 sucrose in the medium. In cultures performed with 20 g.l-1 sucrose FOS concentration increased early in supernatants but later FOS were consumed.
