Resumen:
The objective was to model the dehydration kinetics of plums of the variety President, based on combined techniques. Plums were dehydrated during 8 h in solutions of glucose or sucrose (40% w/w) at 40 ºC. Then they were then dried with hot air at temperatures of 42 ºC or 52 ºC during 12 h. The results of osmotic dehydration were evaluated with Page and Peleg equations, showing R2 higher than 0.9936 in all cases. Drying curves were analyzed by the Page, Newton, Verma and Midilli models, presenting the last two equations the better agreement with the experimental data (R2>0.9401).2 higher than 0.9936 in all cases.
