Resumen:
In this work, the drying of Parchment coffee was solved numerically (coffee genus, arabic species, castle variety) through the resolution of the microscopic balances of energy and mass. In the modeling, convective conditions that take into account the effect of the air flow in the 3D geometry of the coffee bean was considered. The validation was done, a good agreement was obtained between the experimental data and the simulations.
