Resumen:
In the last years, the technologies applied to the production of the coffee have had a great development in the world. Drying is the most important stage due to the economic impact on the finished product, so research has been carried out to make it more efficient and less polluting. However, traditionally drying of parchment coffee in Colombia, was carried out by solar energy and hot air. Combining fluidized bed with microwave heating minimizes technological inconveniences such as inefficient heat transfer by conduction, non-uniform drying, defects caused by overheating and reduces processing times. These combined effects provide new alternatives for improvement of the manufacture process of coffee.
