Resumen:
Probiotics are live organisms that when administered in adequate amounts confer health benefits to the host. In general, they are consumed through food products and represent a significant part of the functional foods market. The incorporation of these microorganisms into edible films appears as a suitable approach to increase their survival upon dehydration and storage. The goal of this work was the development and characterization of methylcellulose-based films containing fructo-oligosaccharides (FOS) and Lactobacillus plantarum CIDCA 83114. Additionally, film application as a functional coating for a baked apple snacks was evaluated.
