Abstract: The influence of drying conditions (relative humidity and air temperature) on the mechanical properties, the colour and solubility of soy protein isolate films was studied using a full factorial design (22 plus star configuration). The optimal conditions of drying were 60ºC and 60% of RH. For these conditions, films were toughest and showed a low solubility while their barrier properties were similar to other protein films. SEM and TEM micrographs showed a dense and homogenous structure and DSC thermograms presented a Tg at –81.78ºC and two peaks of protein denaturation, showing that this phenomenon was not completed during drying.
