Resumen:
Ilex paraguensis aqueous extract (yerba mate) is an antioxidant-rich beverage widely consumed in South American countries. Its antioxidant properties can be exported to other food products by binding or encapsulation in suitable carrier matrices. Here we propose the modification of corn starch granules by application of high hydrostatic pressures (HP) to improve its performance as carrier matrix of yerba mate extract. The aim of the present study was to investigate the effect of high hydrostatic pressure in combination to extract concentration, incorporation before or after HP treatment, and NaOH 0.1% presence during HP treatment, on the final yerba mate amount bound to modified starch. Attention is given to starch both crystallinity and thermal gelatinization, in response to combined pressure and yerba mate treatments. The results showed that higher amounts of yerba mate were incorporated in treated starches, in comparison with native ones.
