Gelatin and chitosan are hydrocolloids with good film forming capacities. The objectives of the present work were to: analyze the film forming solution rheological properties, develop composite, bi-layer and laminated biodegradable films based on gelatin and chitosan, determinate film barrier and mechanical properties and characterize their microstructure. Gelatin and chitosan (CH) concentrations used were 7.5 and 1% (w/w), respectively. Glycerol (0.75%) was added as plasticizer. Micrograph composite and bi-layer systems showed smooth and compact structure indicating a good compatibility between the components and the plasticizer. The effect of film thickness on water vapor barrier properties was studied. Composite, bi-layer and laminated films were tested, improving water vapor barrier properties of composite gelatin films. Besides, mechanical properties of bi-layer systems and composite films did not differ significantly (P>0.05).   Keywords: edible films; chitosan; gelatin; bi-layer and laminated films; barrier and mechanical properties.
