Resumen:
Two types of microbial mixtures containing selected lactic acid bacteria and yeast strains isolated from kefir grains were tested against Shigella invasion on Hep-2 cells. A five-strain mixture demonstrated an important protection against the internalization of Shigella flexneri and Shigella sonnei. Preincubation of cells monolayer with mixtures or single kefir microorganisms achieved a more efficient protection when it compared with the simultaneous coincubation with Shigella. Among the microorganisms, Lactobacillus plantarum strain CIDCA 83114 showed the most significant protection. Cell walls of L. plantarum as well as the whole bacteria demonstrate an equivalent protection of epithelial monolayer; probably a protein or peptide factor could be related with this effect. Our results constitute one of the first steps to understand the potential properties of L. plantarum CIDCA 83114 isolated from kefir against Shigella invasion and demonstrate that this strain is suitable to be part of potential probiotic multistrain dairy starters.
