Resumen:
Strawberry (Fragariaananassa) is a non-climacteric fruit with a very short postharvest life, susceptibleto physiological disorders, mechanical damages, infections caused by pathogensand mainly deterioration by fungi. One strategy to extend the shelf-life offresh-cut fruits are edible coatings derived from biopolymers, such as chitosan(CH) which has been proven to have good antifungical properties for foodprotection. Active ingredients can be incorporated into the edible coatings toenhance both safety and nutritional quality of the product. Hence, the objectiveof the present study was to evaluate the effect of the incorporation of vanillin(V) and geraniol (G) into chitosan-based edible coatings on fresh-cutstrawberry microbial quality.
