Plasticized-gelatin formulations are natural polymers which gained high interest within academic and industrial area because allow obtaining biodegradable films and injected pieces. In this sense, the knowledge of flow properties is crucial in the processing design at industrial or pilot scale. Then, rheological Measurements are importantin order to adjust and model the processing operation. However, he main constrain found during the rheological behavior determination of plasticized gelatin formulations is the loss of water by evaporation. This may lead to significant errors or overestimation fromrheological results which might have impact on processing parameters selection under actual conditions.In this work, a simple technique is proposed in order to avoid errors in rheological measurements by water evaporation in aqueous systems as formulations based on gelatin. The accuracy of the obtained results and assay conditions were studied. The repetitivity of the rheological measurements with the proposed system validate the obtained results.
