Resumen:
A Water-soluble natural antioxidant such as gallic acid was successfully grafted onto fish gelatin through a one-step, environmentally friendly and economically favorable method. Grafting reaction was accomplished at room temperature by radical reaction using a water-soluble and biocompatible redox pair able to generate free radical species at room temperature.Fish gelatin-antioxidant physical mixtures were also obtained under similar reaction conditions than those of grafting in order to evidence the presence of gelatin-antioxidant covalent bounding. Interaction between antioxidant and gelatin was assessed by Fourier transform infrared (FTIR). The conjugation of GA onto FG was also confirmed by UV-vis spectroscopy. Antioxidant incorporation was also corroborated by comparing X-ray diffractograms (XRD) of grafted and physically mixed antioxidant-gelatin samples.The2,2-diphenyl-1-picrylhydrazyl (DPPH) assay revealed that the antioxidant had retained its antioxidant activity after grafting, confirming the efficiency of the proposed reaction pathway. The preliminary results showed that antioxidant moieties covalently bounded to fish gelatin allows producing gelatin with primary antioxidant activity with potential at the food packaging industry.
